How a recipe reads

The cue beats the clock

Your stove, your pan and your tomatoes are not Amparo's. So every timing in the book comes with something you can see, smell or feel, printed in blue. Under the steps that need it, a short Why tells you the reason, so you can fix the dish yourself.

The words in blue
The cue to move on: the onion is soft and see-through, a knife comes out clean.
Why
The reason a step is done that way.
If it went wrong
The usual mistakes, what caused them, and what to do now or next time.
Keeping it
Where it keeps, for how long, and how to reheat it, following U.S. food-safety guidance.

Tortilla de patatas · step 2

2Put the oil in the wide pan over low heat and add the potatoes. The oil should barely move. Cook for about 20 minutes. If you are using the onion, add it 10 minutes after the potatoes. They are ready when the tip of a knife goes into a slice like soft butter, with nothing pushing back. If it catches, give them 5 more minutes. Nothing should brown.

WhyIn hot oil the outside of the potato hardens before the inside is soft, and a potato with a crust will not drink the egg. The potato takes a bath, not a beating.

Amparo, the cook of the channel

Who is cooking

Amparo

I am from Sueca, a rice town south of Valencia. In my mother's kitchen the paella pan hung on a nail by the back door. She cooked by eye, by ear and by smell. You and I will do it with a measuring cup, a timer and a few words on the page that tell you what to look for.

Amparo

Amparo is a character created for the YouTube channel @CooktheSpanishWay. The recipes in the book were compiled from published Spanish recipes, at least two for each dish, and checked against U.S. food-safety guidance.

Questions

Before you buy

Is this a printed book?

No. It is a digital book in two files, a PDF and an EPUB. Nothing is shipped. You can print any page of the PDF, and the recipe cards at the back are made for printing.

Which file should I use?

The PDF keeps the designed pages and the pictures exactly as laid out, and suits a tablet, a computer or a printer. The EPUB reflows its text to fit a phone or an e-reader. The printable recipe cards are in the PDF.

Does it work on a Kindle?

Yes. Send the EPUB to your Kindle with Amazon's Send to Kindle, or read it in any EPUB reader app.

Will I find the ingredients in the US?

Most of them are in an ordinary supermarket. For the few that come from a Spanish grocery or online, the pantry chapter has a table of what to look for and what to use instead.

Are the measures American?

Yes: cups, tablespoons and teaspoons, pounds and ounces, and degrees Fahrenheit.

Were the recipes tested in a kitchen?

No. Each recipe was compiled from published Spanish recipes and its quantities and timings were checked against them. That is why every step tells you what you should see before you move on. All the sources are listed at the back of the book.

How does the book handle food safety?

Where Spanish home cooking and U.S. guidance disagree, the book follows the U.S. Food and Drug Administration and the U.S. Department of Agriculture, and the recipe says so. Runny eggs only with pasteurized eggs, a full boil for dried beans, garlic in oil kept in the fridge.

What if I lose the files?

Gumroad's receipt email keeps your download link, so you can download the files again.

Can I get a refund?

Yes. If the book is not right for you, ask for a refund within 7 days of buying and you get your money back. To ask, reply to your Gumroad receipt or write to hello@cookthespanishway.com.

How do I get in touch?

Write to hello@cookthespanishway.com. If you have bought the book, you can also reply to your Gumroad receipt email.
